The 10" Kitchen is the medium sized of all our kitchen sieves and has a stainless steel mesh

Fine is for the heavily milled widely available flours, cocoa etc

Medium is more for artisan made small batch flours, its mesh is similar to that of most conventional metal domed kitchen strainers

Coarse is for the very largest of grains

Medium and coarse are most recommended for veg, rice, pasta draining.
